A practical tip for anyone who finds commercial tiramisù pastes too intense in flavor, with a small trick in the lab:

  1. For every 30-40 g of tiramisù paste, add 10-15 g of vanilla paste.
  2. Add a pinch of salt only to the vanilla paste and mix it in well before combining it with the tiramisù paste: this way the salt distributes more evenly and enhances sweetness without being noticeable itself.
  3. To round out the flavor, you can also add mascarpone to the mix: as a rough guide, about 500 g per 4 liters of mix.
  4. After blending everything together, check the Brix level with the refractometer: adding mascarpone and pastes can push the value higher than expected.
  5. If the Brix is too high, correct it by adding a little fresh milk at 3.5% fat, up to a maximum of about 100 g, to bring the mix back into the right range.
